Lemon Infused Honey - YUM!

I'm a Lemon Lover!

I've been drinking a lot of lemon juice lately.  It started when I had a large kidney stone that had to be removed last year and the doctor advised me to add lemon to my water to keep them away.  Well, that inspired me to get creative with lemon.  It has been so cold that I have been drinking a lot of tea rather than water.  I love lemon and honey in my tea, and I wondered if I could infuse the honey with lemon.  Turns out it is actually really simple and tastes delicious!

I had some honey that had started to crystalize in the cupboard so I decided to use it for my first attempt at lemon-infused honey.  It worked perfectly!

I started with a 2lb container of honey, poured it into a sauce pan, and started to heat it at a very low temperature.  While it was heating, I created the lemon zest and juiced the lemons, removing the seeds.  I then added the 4 tablespoons of fresh lemon zest and 4 tablespoons of fresh lemon juice to the warming honey.  The idea wasn't to cook it, but rather for the honey to become liquid so the lemon would blend well.






Once it was blended well I poured it into a mason jar.  I didn't strain it right then but ended up straining it after the fact as the lemon zest was a little chunkier than I anticipated when I added it to my tea.



I can't tell you how delicious this honey is although I will say that it came out very thin.  I know I added a lot of lemon juice, I just didn't expect it to come out so thin.  I think next time I do it I will try the cold infusion method.  From what I've read it takes longer ( a couple weeks) for the flavor to fully infuse but by not heating the raw honey it maintains all of its nutrients.
